Caramelized Walnut


I use caramelized walnut as a topping for my tiramisu cake. The candied walnut is delicious eaten on its own and can be quite addictive. There are few tips to note when making caramel.

1) Use a non-stick pan
2) Do not stir or agitate the sugar while cooking or it will crystallize.
3) Place your caramelized walnut on a silicone mat to cool.

Ingredients needed:-

120g caster sugar
80g   water
30g   unsalted butter
300g walnut (roasted and chopped finely) or almond bits

Method:-

1) Add caster sugar into a non-stick pan.
2) Add water slowly so as not to splash the sugar.
3) Cook at medium fire till its bubbly. Do not stir or agitate the mixture.
4) When mixture turns brown, add butter and stir till evenly mixed.
5) Switch of the fire and add chopped walnut. Stir till all the walnut bits are evenly coated.
6) Pour out the caramelized walnut onto a silicone mat and let it cool down completely.
7) Break up the walnut bits by hand.
8) Store in an airtight container. You may keep in the chiller for up to a month.
